Ingredients:

For the Prawn Patties:

  • 500 grams of prawns, peeled and deveined
  • 1 egg, beaten
  • 1/2 cup breadcrumbs (plus extra for coating)

  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • Oil, for frying

For the Corn and Tomato Salsa:

  • 1 cup corn kernels (fresh or canned)
  • 1 large tomato, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup chopped coriander
  • Juice of 1 lime
  • Salt and pepper, to taste

For the Coleslaw:

  • 2 cups shredded cabbage (mix of red and green)
  • 1 carrot, grated
  • 1/2 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon sugar
  • Salt and pepper, to taste

Other:

  • Burger buns
  • Tartare sauce

Instructions:

  1. Prepare the Prawn Patties:
    • In a food processor, combine prawns, egg, breadcrumbs, parsley, and garlic. Pulse until mixed but still slightly chunky for texture.
    • Form the mixture into patties, coat each patty with beaten egg and breadcrumbs, and set aside.
    • Heat oil in a pan over medium heat and fry the patties until golden and cooked through, about 3-4 minutes per side. Drain on paper towels.
  2. Make the Corn and Tomato Salsa:
    • In a bowl, mix together corn kernels, diced tomato, red onion, coriander, lime juice, salt, and pepper. Set aside to let the flavours meld.
  3. Prepare the Coleslaw:
    • In another bowl, combine shredded cabbage, grated carrot, mayonnaise, vinegar, sugar, salt, and pepper. Mix well until all the vegetables are coated with the dressing.
  4. Assemble the Burger:
    • Toast the burger buns lightly.
    • Spread tartare sauce on each side of the bun.
    • Place a layer of coleslaw on the bottom bun.
    • Top coleslaw with a generous spoonful of corn and tomato salsa.
    • Add the patty
    • Cover with the top half of the bun.
