If you’re a seafood lover and enjoy bold flavours, this Salted Egg Tarakihi Bite recipe is a must-try! Tarakihi, a popular fish in New Zealand, is known for its delicate texture and mild flavour, making it the perfect canvas for the rich and savoury salted egg yolk coating. Here’s how you can whip up this tasty dish at home.

Ingredients:

1 Tarakihi fillet (180-220g), cut into strips

4 cooked salted duck egg yolks

4 cups plain flour (120g)

50g salted butter

4 stalks fresh curry leaves

3 tbsp milk powder

1 tsp baking soda

 

Instructions:

Battering the Tarakihi:

  1. Preheat oil for deep frying.
  2. Mix dry ingredients: flour, baking soda, salt & pepper to taste.
  3. Add 400ml cold water and mix well.
  4. Prepare the remaining 2 cups of plain flour on a plate.
  5. Mix your fish strips in the dry plain four and dips the batter before deep frying, remember to shake off any excess batter.
  6. Repeat process until all fish strips are fried.
  7. Lastly, remove curry leaves from their stalks and fry for 10 seconds or until crispy.

Making the salted egg sauce:

  1. Heat up 1 tbsp oil on medium heat.
  2. Melt 50g butter making sure not to burn.
  3. Add in 4 cooked salted duck egg yolks. Try to break it apart in the sauce and cook until foamy.
  4. Add salt and pepper to taste.
  5. Add in you fried fish strips and curry leaves, coat thoroughly with sauce.
  6. Mix in 3 tbsp milk powder and coat well.

For the best flavour, ensure your salted egg yolks are well-cooked and mashed into a fine consistency. This will help the sauce cling better to the fish bites, making each mouthful burst with flavour. Serve this dish over hot white rice and you favourite hot sauce for the perfect meal.
