75g butter

50g sugar
50g boiling water
75g ice cream or mascarpone to melt on top

How to make

  1. Beat egg, milk with sugar and cinnamon until combined. Soak sliced bread for approx. 5 mins. Turn over so both sides absorb all the liquid.
  2. Gently fry in butter until golden brown on both sides (tip: use 50/50 butter and vege oil)
  3. Drain on to paper towel and keep warm.
  4. Quickly fry banana until lightly coloured but not too soft.
  5. boil water and add sugar then blueberries, take off the heat and allow to cool a little. (Tip: make syrup while waiting for bread to soak and set aside)
  6. Serve French Toast with banana, generous coating of blueberry syrup and ice cream or mascarpone on top.
