Will’s Nam Jim Dipping Sauce
- 2 long green chillies, roughly chopped. NOTE: you can substitute for sweet chilli sauce if you don’t like the heat and leave out the sugar below

2 garlic cloves, quartered

2 spring onions, roughly chopped

2 tablespoons freshly squeezed lime juice

2 tablespoons peanut oil
- 1 tablespoon fish sauce
- 1 tablespoon grated palm sugar (see note for chillies)
- 1/4 cup chopped fresh coriander leaves
Blend all ingredients and plaice in dipping bowl.
Steam dumplings as per instructions for 3-5 mins until pipping hot.
Serve with dipping sauce and garnish with fresh coriander
